The AccuTemp Steam’n’Hold is still the world’s only vacuum chamber steamer, capable of generating steam at any temperature between 150° F to 212° F.

It all began with an idea to use a vacuum to lower the boiling point of water and the temperature of the resulting steam, to provide more control over the steaming process and better product cooking and hold capabilities.
 

In addition to this vacuum capability…the Steam’n’Hold was designed with a simple water reservoir in the cavity bottom, which is heated by a low watt density heating element mounted under that cavity…NOT submerged in water.

Controlling The Temperature Of Steam

You control the steam temperature AND vacuum by setting the desired cook temperature. When set at 212°F, the cooking compartment is at normal atmospheric pressure.

If you reduce the desired steaming temperature, the vacuum pump goes to work, reducing compartment pressure until water boils and converts to steam at that set temperature…say 180°F.

Working In A Vacuum
A simple vacuum pump reduces the air pressure in the cooking compartment, which allows the water in the bottom to boil at temperatures below 212°F. 

The more air you remove [measured in column inches of mercury], the lower the boiling point of water.

With NO water line or drain connection required, you just plug it in, add three gallons of tap water and you’re ready for hours of steaming and product holding.
